Pork And Shrimp Wontons - cooking recipe

Ingredients
    10.5 oz ground pork
    14 oz raw shrimp, peeled, deveined, roughly chopped
    3/4 inch piece fresh ginger, grated
    1 clove garlic, quartered
    1 None fresh small red chili, roughly chopped
    2 None spring onions, roughly chopped
    1/4 cup Chinese cooking wine
    1 1/2 tbsp light soy sauce, plus extra for dipping
    1 tsp granulated sugar
    1 None large egg white
    40 None wonton wrappers
Preparation
    In a food processor, combine ground pork, shrimp, ginger, garlic, chili and spring onions and pulse until finely minced. Add cooking wine, soy sauce, sugar and egg white. Process until combined.
    Arrange wonton wrappers on a flat work surface. Place rounded teaspoonfuls of pork mixture in the center of each wrapper. Brush a little water around the edges of each wrapper then bring edges together to seal.
    Cook wontons in boiling salted water for 5 mins, or until filling is cooked through. Remove with slotted spoon. Serve with soy sauce for dipping.
