Oaty Apple And Apricot Bars - cooking recipe

Ingredients
    1 cup dried apricots, chopped
    1 1/2 cups rolled oats
    1/2 cup firmly packed brown sugar
    1 cup self-rising flour
    12 tbsp (1 1/2 sticks) butter, melted
    2 small Granny Smith apples, sliced
Preparation
    Preheat the oven to 350\u00b0F. Grease and line an 11 x 7-inch baking pan with parchment paper, extending paper above long sides for handles.
    Place the dried apricots in a small saucepan with 1/2 cup water; bring to a boil . Reduce the heat to low; simmer, uncovered, for about 3 mins or until the apricots are softened and the water is absorbed.
    Combine the oats, brown sugar and sifted flour in a large bowl. Sir in the butter and mix well. Press two-thirds of the mixture in the bottom of the prepared pan. Arrange the apple slices evenly over the crust. Top with the apricots. Sprinkle evenly with the remaining oat mixture and press down lightly.
    Bake for 30-35 mins or until golden brown. Serve warm with whipped cream or ice cream, if desired.
