Chocolate Pudding Cakes - cooking recipe

Ingredients
    8 tbsp (1 stick) butter
    3/4 cup granulated sugar
    1 tsp vanilla extract
    2 None eggs
    1 1/4 cups self-rising flour
    2 tsp instant coffee powder
    2 tbsp milk
    5 oz semi-sweet chocolate, chopped and melted
    1/2 cup packed brown sugar
    1 tbsp unsweetened cocoa powder
    None None Ice cream or whipped cream, to serve
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease six 1-cup ramekins or a 1 1/2-quart baking dish.
    Beat butter and granulated sugar in a large bowl with an electric mixer until light and fluffy. Beat in vanilla. Add eggs, one at a lime, beating well after each addition.
    Sift flour and coffee powder. Fold into mixture with milk. Stir in melted chocolate. Spoon evenly into ramekins (or baking dish).
    Whisk 1 cup boiling water, brown sugar and cocoa powder in a medium bowl. Pour evenly into each ramekin.
    Bake for 15-20 mins until puffed and firm. Let stand 2 mins before unmolding onto serving plates. Serve with ice cream or whipped cream.
