Sausage And Squash Casserole - cooking recipe

Ingredients
    1 lb winter squash, peeled, seeded, chopped
    1 tbsp olive oil
    2 None lamb sausages
    5 oz cooked short pasta
    1 cup tomato sauce
    3 oz feta cheese, crumbled
    3 oz chargrilled pepper strips
    2 None spring onions, sliced
    1 clove garlic, minced
    None None fresh mint leaves, to serve
Preparation
    Preheat oven to 400\u00b0F. Line a baking tray with parchment paper. Lightly grease 4 - 12 oz ramekins.
    Toss squash with oil and season. Transfer to a baking tray and roast for 20-25 mins, until tender and golden.
    Meanwhile, heat a frying pan over medium heat. Lightly coat with oil and cook sausages for 8-10 mins, turning until browned and cooked through. Remove from pan and slice thinly.
    In a large bowl, combine pasta, tomato sauce, squash, sausage, feta, peppers, onions and garlic. Season to taste. Distribute between ramekins and bake for 10-15 mins, until lightly golden brown.
    Serve topped with fresh mint leaves.
