Mushroom And Spinach Bread Pudding - cooking recipe

4 slices whole-grain bread, cut into 3/4 inch cubes
1 2/3 cups skim milk
1 None small onion, finely chopped
8.75 oz button mushrooms, thinly sliced
5.25 oz baby spinach
3 None medium tomatoes, quartered
4 None eggs + 6 egg whites, lightly beaten
Preparation

Preheat oven to 350\u00b0F. Lightly grease a 9 inch square baking dish with olive oil.
Combine bread and milk. Let stand for 10 mins.
Meanwhile, lightly coat a nonstick frying pan with oil. Cook onion and mushrooms for 3-5 mins over medium heat, until tender and liquid has evaporated. Let cool slightly then mix with bread, spinach and tomatoes. Transfer to prepared pan. Add whisked eggs and egg whites. Bake for 35 mins, until set. Serve.
