Macadamia Nut Brittle - cooking recipe

Ingredients
    3 cups unsalted macadamia nuts, coarsely chopped
    1/2 cup shredded coconut, toasted
    1/2 cup granulated sugar
    1/2 cup honey
    11 tbsp butter, chopped
Preparation
    Grease and line 2 - 10x6 inch rimmed baking pans with parchment paper. Combine nuts and coconut then scatter over prepared pans.
    Combine sugar, honey and 2 cups water in a large, deep heavy-bottomed saucepan. Cook over low heat, stirring, for 4 mins, or until sugar dissolves. Bring to a boil. Boil, without stirring, for 12-15 mins, or until syrup turns a rich golden color. Remove from heat and let bubbles subside. Add butter and stir until combined. Pour over nuts and coconut then let stand at room temperature for 3 hours, or until set.
    Break into pieces to serve.
