Farfalle With Radicchio And Pancetta - cooking recipe

18 oz farfalle (bow tie pasta)
2 tbsp extra virgin olive oil
7 oz pancetta, finely diced
1 None red onion, halved, thinly sliced
1 clove garlic, minced
2 heads radicchio, halved, cut into 1/3 inch-wide strips
2 tbsp balsamic vinegar
Preparation

Cook farfalle in boiling, salted water until al dente. Drain and return to pan. Cover and set aside to keep warm.
Meanwhile, heat oil in a large frying pan over medium heat. Cook pancetta for 4 mins, stirring occasionally, until browned. Add onion and cook for 5 mins, stirring, until softened. Add garlic and cook for 1 min. Increase heat to high. Add radicchio and 1/2 cup water. Cook for 4 mins, until radicchio is wilted. Add balsamic vinegar. Season.
Add pasta and cook over high heat, tossing, for 1 min, until warmed through. Serve.
