Mushroom Carpaccio - cooking recipe
Ingredients

1 bunch chives, finely chopped
60 g parmesan cheese, finely grated
4 tbsp lemon juice
1 tsp grain mustard
1 pinch sugar
8 tbsp oil
200 g mushrooms, cut into fine slices
Preparation

Arrange mushroom slices so they are overlapping slightly on a serving plate. Whisk together lemon juice, mustard, sugar and oil and season then drizzle over mushrooms. Sprinkle with grated Parmesan and chives.
