Onion Soup - cooking recipe

Ingredients
    1 tbsp vegetable oil
    2 lb onions, peeled, cut into quarters and thinly sliced
    1 clove garlic, peeled and finely chopped
    4 sprigs thyme
    1 pinch cayenne pepper
    4 cups vegetable stock
    1/2 cup dry white wine
    4 slices thick white bread
    2 oz reduced fat cheese, grated
Preparation
    Heat the oil in a large pan. Add the onion, garlic and thyme leaves and saute over a medium heat for about 10 minutes to soften the onion. Sprinkle in the cayenne.
    Pour in the stock, bring to a boil, cover and simmer for 20 minutes. \r\nPreheat the oven to 400\u00b0F.
    Stir the wine into the soup and season with salt, pepper and a pinch of sugar.\r\nLadle into 4 ovenproof soup bowls. Add a slice of bread to each bowl and sprinkle the cheese on top.\r\nBake for 8-10 minutes. Serve hot.
