1 None onion, thickly sliced
2 cloves garlic, crushed
1 piece (3/4 inch) fresh ginger, grated
2 None fresh long red chili peppers, thinly sliced
5 oz oyster mushrooms, halved
4 oz fresh shiitake mushrooms, halved

1 lb Chinese egg noodles
6 None green onions, thickly sliced
1/4 cup oyster sauce
1 tbsp kecap manis (thick sweet soy sauce)
1 tsp sesame oil
Preparation

Heat half the peanut oil in a wok on high heat. Stir-fry the beef, in batches, until browned. Remove from the wok.
Heat the remaining peanut oil in the wok. Stir-fry the onion until softened. Add the garlic, ginger, chili pepper and mushrooms; stir-fry until the mushrooms are tender.
Meanwhile, place the noodles in a large heatproof bowl; cover with boiling water. Separate with a fork; drain.
Return the beef to the wok with the noodles and remaining ingredients; stir-fry until heated through. Season to taste.
