Ingredients

1 quart vanilla ice cream, softened
3/4 cup canned apple pie filling
4 oz butter cookies or graham crackers, crushed
2 tbsp glace ginger, chopped
1/2 tsp mixed spice, such as pumpkin pie spice (optional)
Preparation

Place ice cream in a large bowl. Using a large metal spoon, fold in apple pie filling, cookies, ginger and spice.
Spoon into an 8 x 4-inch loaf pan. Freeze 4 hours, or overnight, until firm.
