Baked Fish On Potatoes - cooking recipe

Ingredients
    4 None potatoes, scrubbed and cut into thick wedges
    2 tbsp olive oil
    1 small leek, thinly sliced
    1 None zucchini, halved and thinly sliced
    1/4 cup coarsely chopped sun-dried tomatoes
    4 None white fish fillets
    None None Lemon wedges, to serve
Preparation
    Preheat the oven to 400\u00b0F. Place potatoes in a large baking dish. Toss with oil. Season to taste.
    Bake 20 mins. Sprinkle leeks over potatoes.
    Bake 5 mins. Add zucchini and tomatoes; stir until combined. Place fish on top.
    Bake 10-15 mins until fish flakes when tested with a fork. Serve with lemon wedges.
