Summer Veggie Fried Cauliflower "Rice" - cooking recipe
Ingredients

2 tbsp olive oil
1 None small onion, minced
1 cup sliced fresh snow peas
1/4 cup grated carrot
1 cup sliced fresh asparagus
1 head cauliflower, grated (about 6 cups)
1/4 cup scallion
4 tbsp chicken broth
1-2 tbsp seasoned rice wine vinegar, like Nakano
2 tbsp chopped fresh parsley
None None sauteed diced yellow pepper for garnish
Preparation

In a large skillet over medium heat, cook onion, snow peas, carrot and asparagus in oil for 5 mins or until tender, but still bright green.
Increase the heat to medium high, add cauliflower, scallion and chicken broth. Cook while stirring occasionally, for 6 mins.
Stir in vinegar and parsley. Season to taste with salt and pepper. Can be served warm or cold.
