Banana Pancakes With Berry Smoothies - cooking recipe

Ingredients
    1 cup self-rising flour, sifted
    1 tbsp granulated sugar
    1 cup buttermilk
    2 oz low-fat ricotta cheese
    1 None egg
    1 None banana, peeled, chopped, plus extra slices to serve

    2 None frozen bananas, sliced
    5 oz frozen mixed berries
    3/4 cup frozen yogurt
    None None honey, to serve
Preparation
    To make the pancakes, combine flour and sugar. Whisk together buttermilk, ricotta and egg then whisk into dry ingredients until smooth. Fold in chopped banana. Set aside for 15 mins.
    Heat a large, nonstick frying pan over medium heat. Lightly coat with oil. Working in 2 batches, pour 1/4 cup batter into pan. Cook for 2-3 mins, until bubbles appear on the surface and break open. Flip over and cook for 1-2 mins, until cooked through and golden.
    To make the berry smoothie, combine banana, berries and frozen yogurt in a blender. Puree until smooth.
    Serve pancakes with extra sliced banana, a drizzle of honey and berry smoothies.
