Halloween Pumpkin Witch'S Cauldron And Broomsticks - cooking recipe

Ingredients
    1 None whole sugar pumpkin (about 3 1/2 lbs)
    2 tbsp olive oil
    1 bunch celery, cut into 3-inch lengths
    1 cup plain Greek yogurt
    1 cup crumbled feta cheese
    1/2 cup toasted pecans
    1/4 cup chopped mint
    1 clove garlic, crushed
Preparation
    Preheat the oven to 350\u00b0F. Line a baking pan with foil.
    Cut a 1-inch thick slice from top of pumpkin for lid. Cut a 4-inch slice from bottom. Scoop out seeds from remaining pumpkin to create a bowl.
    Peel the pumpkin bottom and cut into chunks. Arrange on pan with pumpkin bowl and lid; drizzle with oil. Bake 25-30 mins, until tender.
    For the broomsticks, cut celery sticks at one end into 1 1/2-inch lengthwise slits using a small sharp knife.Squash the frayed end flat and cut through center horizontally to create 2 layers. Place in bowl of iced water to curl ends. Drain well; pat dry just before serving.
    Transfer baked pumpkin pieces to a bowl; mash well. Allow to cool.
    Stir yogurt, feta, mint, nuts and garlic into mashed pumpkin. Season to taste; mix well. Spoon into pumpkin bowl. Serve with celery broomsticks.
