Guilt Free Caesar Salad - cooking recipe

Ingredients
    2 oz Turkish bread or ciabatta, thinly sliced
    1 clove garlic, minced
    2 tbsp chicken stock
    1 oz Parmesan cheese, grated
    1 tbsp fresh parsley leaves, chopped
    2 tsp lemon juice
    1 tsp Dijon mustard
    2 None anchovy fillets, rinsed, mashed
    2 tbsp extra virgin olive oil
    1 head baby romaine lettuce, washed, dried
    1 None baby cos lettuce, washed, dried
Preparation
    Preheat oven to 350\u00b0F. Lightly coat bread with olive oil then arrange on a baking tray. Bake for 8 mins, until toasted.
    Meanwhile, whisk together garlic, chicken stock, 1/2 the Parmesan, parsley, lemon juice, mustard and anchovies. Gradually whisk in oil until slightly thickened.
    Place lettuce in a serving bowl. Top with toasted bread and remaining Parmesan cheese. Just before serving, add dressing and toss to combine.
