Spicy Pork And Noodle Stir Fry - cooking recipe

Ingredients
    1 tbsp peanut oil
    1 None red onion, sliced into thin wedges
    1 tbsp finely chopped lemongrass
    1 None long red chili, finely chopped
    1 tbsp finely chopped fresh ginger
    2 cloves garlic, finely chopped
    18 oz ground pork
    2 tbsp green or red curry paste
    3.5 oz green beans, sliced
    2 tbsp lime juice
    1/2 tbsp fish sauce
    1 tbsp brown sugar
    3 tbsp fresh Thai basil leaves
    4 oz thin rice noodles, soaked, drained
Preparation
    Heat oil in a wok or large frying pan over high heat. Stir-fry onion, lemongrass, chili, ginger and garlic for 1-2 mins, until fragrant.
    Add pork and stir-fry for 5-6 mins, breaking up any lumps. Add curry paste and stir-fry for 1-2 mins.
    Add green beans, lime juice, fish sauce and sugar. Stir-fry for 1-2 mins, until green beans are tender.
    Add 1/2 the basil and noodles and toss to combine. Serve topped with remaining basil.
