Autumn Burger With Sweet Potato Chips - cooking recipe

500 g beef steak mince
2 None red onions, 1 finely chopped, 1 sliced into rings
1 tsp Dijon mustard
3 tbsp breadcrumbs
3 tbsp milk
1 litre + 1 tbsp olive oil
600 g sweet potatoes, peeled and finely sliced into rounds
4 None burger buns
8 None rashers streaky bacon
6 tbsp apple sauce
8 None radicchio lettuce leaves, torn
None None mayonnaise, to serve (optional)
Preparation

Mix ground beef, chopped onion, mustard, breadcrumbs and milk in a bowl. Season to taste then form into 4 burgers. Heat 1 tbsp oil in a frying pan, add burgers and sear for 8-10 mins, turning occasionally, until cooked through.
Meanwhile, heat remaining oil in a deep-fat fryer or pot to 350\u00b0F. Add potato slices, in batches. Remove with a slotted spoon and drain on paper towels. Season with salt and keep warm.
To finish, fry bacon for 4-5 mins until crispy then drain on paper towels. Spread applesauce over burger buns then add lettuce, burgers, sliced onion and bacon. Serve with sweet potato chips and mayonnaise (if using).
