Coconut, Almond And Apricot Macaroons - cooking recipe

Ingredients
    2 None large egg whites
    1/2 cup granulated sugar
    1 tsp vanilla extract
    2/3 cup shredded coconut
    2/3 cup slivered almonds
    3/4 cup finely chopped dried apricots
    2 tbsp all-purpose flour, sifted
Preparation
    Preheat oven to 300\u00b0F. Line 2 baking trays with parchment paper.
    In a stand mixer, whip egg whites to soft peaks. Gradually add sugar, beating until thick and glossy. Beat in vanilla then fold in 1/2 cup coconut, almonds, apricots and flour. Drop level tablespoonfuls of mixture onto prepared trays about 1 1/2 inches apart. Sprinkle remaining coconut over top then bake for 20-25 mins, until lightly browned. Let cool on trays.
