Cherry Chocolate Cheesecake - cooking recipe

6 oz chocolate wafer cookies
4 tbsp (1/2 stick) butter, melted
2 pkg (8 oz each) cream cheese, softened
1/3 cup sugar
2 None eggs
7 oz semi-sweet chocolate, melted
3 oz semi-sweet chocolate, chopped
1 can (15 oz) pitted black cherries, drained
None None Chocolate roses, to decorate (optional)
Preparation

Grease 9-inch round springform pan. Process cookies until mixture resembles fine breadcrumbs. Add butter; process until just combined. Press mixture evenly over bottom of prepared pan. Cover; refrigerate for 30 mins, or until firm.
Preheat the oven to 350\u00b0F. Beat cream cheese and sugar in large bowl with electric mixer until smooth. Add eggs, one at a time, beating well between additions. Gradually beat in melted chocolate. Fold in chopped chocolate and cherries.
Place springform pan on a baking pan. Spread cheesecake mixture into pan. Bake for 50 mins, or until set. Cool to room temperature. Cover; refrigerate for 3 hours or overnight.
Serve cheesecake decorated with chocolate roses, if desired.
