8 tbsp (1 stick) butter, melted
2 tsp finely grated lemon peel
3 None eggs, separated
1/2 cup self-rising flour
1/3 cup lemon juice
1 1/3 cups milk

Preheat the oven to 350\u00b0F. Grease six 1-cup baking dishes.
Combine butter, lemon peel, sugar and egg yolks in large bowl. Stir in sifted flour then lemon juice. Gradually stir in milk. Mixture should be smooth and runny.
Beat egg whites in medium bowl with electric mixer until soft peaks form. Fold into lemon mixture, in two batches.
Place baking dishes in large baking pan. Divide lemon mixture among dishes. Add enough boiling water to baking pan to come halfway up sides of dishes.
Bake puddings about 45 mins.
