Apricot, Chocolate And Coconut Bars - cooking recipe

3 None large egg whites
1/2 cup granulated sugar
3 tbsp all-purpose flour, sifted
1 cup shredded coconut
2/3 cup finely chopped dried apricots
3 oz milk chocolate, grated coarsely, plus 3 oz melted
3/4 cup slivered almonds
Preparation

Preheat oven to 300\u00b0F. Grease an 8x12 inch rimmed baking pan and line base and long sides with baking paper, extending paper 2 inches over sides.
In a stand mixer, whip egg whites to soft peaks. Gradually add sugar, beating until sugar dissolves. Fold in flour, coconut, apricots and grated chocolate. Transfer to prepared pan and bake for 15 mins.
Sprinkle with slivered almonds, pressing down gently, then bake for another 30 mins, or until light golden brown. Let cool in pan.
Drizzle melted chocolate over cookie and let stand at room temperature until set. Cut into bars to serve.
