Spring Quiche - cooking recipe

Ingredients
    2 sheets frozen pie dough
    2 tsp olive oil
    2 slices bacon, chopped
    4 None eggs, lightly beaten
    2/3 cup heavy cream
    1 None green onion, finely chopped
    2 tbsp fresh mint, chopped
    1 None zucchini, sliced
    2 oz frozen peas, thawed
    3.5 oz feta cheese, crumbled
Preparation
    Preheat oven to 400\u00b0F. Lightly grease an 8 inch pie dish. Overlap pastry sheets lightly and use to line pan. Chill for 15 mins.
    Meanwhile, heat oil over high heat and fry bacon for 3-4 mins, or until golden. Let cool.
    Line pie shell with parchment paper and fill with pie weights. Bake for 10-12 mins, or until light golden. Remove baking paper and weights and bake for another 5 mins. Reduce heat to 350\u00b0F.
    Whisk eggs and cream together. Add green onion and mint. Season. Transfer to pie shell. Arrange bacon, zucchini, peas and feta over top and bake for 30-35 mins, or until firm.
