Ingredients

1 1/2 cups sugar
4 1/2 lbs watermelon, seeds and rind removed
2/3 cup vodka
4 None egg whites (if making without an ice cream maker)
Preparation

Mix sugar and 1 cup water in a medium saucepan on low heat. Stir for 2-3 mins until sugar is dissolved. Bring to a boil. Simmer, without stirring, for 10 mins. Remove from heat. Transfer to a large bowl. Cool.
Place watermelon in a food processor or blender. Process until pureed. Pour through a sieve into bowl with syrup. Stir in vodka.
Pour into an ice cream maker. Freeze according to manufacturer's directions. Pour into a loaf pan. Cover with foil and freeze.
If you don't have an ice cream maker, add egg whites along with the vodka, to slow down the growth of ice crystals. Pour into a loaf pan. Cover with foil and freeze.
