Creamy Lemon Thyme Chicken - cooking recipe

Ingredients
    2 tbsp olive oil
    2 1/4 lb chicken thigh fillets, halved
    2 None Spanish onions, thinly sliced
    1 bulb fennel, thinly sliced
    4 sprigs fresh lemon thyme
    2 cloves garlic, minced
    1/2 cup dry white wine
    2 tbsp whole grain mustard
    1 None sweet potato, coarsely chopped
    1 cup chicken stock
    3/4 cup heavy cream
Preparation
    Heat 1 tbsp oil in a large frying pan over medium-high heat. Sear chicken, in batches, until browned. Transfer to a 4.5 quart slow cooker.
    Add remaining oil to pan. Cook onion, stirring, for 10 mins, or until caramelized. Transfer to cooker along with remaining ingredients. Cook, covered, on low for 4 hours. Discard thyme and season to taste.
