Tropical Fruit Bombes - cooking recipe

Ingredients
    3 large ripe mangoes, peeled and pitted, 2 coarsely chopped, 1 sliced
    1 tbsp granulated sugar
    6 cups vanilla ice cream
    3/4 cup macadamias, toasted and coarsely chopped
    None None FOR THE PASSION FRUIT SAUCE
    6 None passion fruits, pulp scooped out
    2 tbsp orange juice
    2 tbsp powdered sugar
    2 tbsp orange liqueur
Preparation
    Blend or process chopped mangoes and granulated sugar until smooth.
    Place ice cream in a large bowl; stir with a wooden spoon until just softened. Swirl mango puree and 1/2 cup of the nuts through ice cream. Spoon into eight 1-cup molds. Cover with foil and freeze overnight, or until firm.
    For the passion fruit sauce, place passion fruit pulp in a small bowl. Stir in remaining ingredients.
    Dip molds, one at a time, into a bowl of hot water for 1 second. Turn bombes onto serving plates. Drizzle with passion fruit sauce and decorate with sliced mango and remaining nuts.
