Duck, Bean Sprout And Cilantro Omelette - cooking recipe

Ingredients
    8 None large eggs
    2 tsp sesame oil
    1 lb barbecued duck meat, shredded
    7 oz bean sprouts, trimmed
    1/2 cup fresh cilantro leaves
    4 None spring onions, finely sliced
    4 tbsp vegetable oil
    None None plum sauce, to serve
Preparation
    In a large bowl, whisk eggs, 1/3 cup water and sesame oil together until combined. Season to taste with white pepper.
    In a separate bowl, combine shredded duck meat, bean sprouts, cilantro and spring onions.
    Heat 1 tbsp oil in a large wok over medium heat. Pour 1/4 of egg mixture into wok, swirling to create an 8 inch circle. Cook for 1-2 mins, until base is golden. Slide out onto a serving plate, place 1/4 of filling onto 1/2 of omelette and fold over. Repeat with remaining oil, egg mixture and filling. Drizzle with plum sauce to serve.
