Smoked Salmon And Asparagus Salad - cooking recipe
Ingredients

2 1/4 lb asparagus, woody ends removed
5 oz watercress
5 oz baby arugula
12 oz hot-smoked salmon, torn into bite-sized chunks
None None FOR THE VINAIGRETTE
1 tsp Dijon mustard
3 tbsp olive oil
1 tbsp white wine vinegar
Preparation

Steam asparagus until bright green and just tender when pierced with a sharp knife (about 5 mins). Drain and wrap in a clean tea towel to dry.
Arrange asparagus, watercress and arugula on a large serving platter. Nestle salmon into greens.
To make the vinaigrette, whisk together mustard, oil and vinegar. Season then drizzle over salmon, asparagus and greens. Serve.
