Amaretti Almond Cake - cooking recipe

Ingredients
    200 g butter, softened plus extra for greasing
    200 g marzipan, grated or finely chopped
    125 g caster sugar
    1 tsp vanilla extract
    1 tsp almond extract
    Pinch None salt
    4 medium eggs
    350 g plain flour, sifted
    1 tbsp baking powder
    5 tbsp milk
    2 x 400 g cans cherries, drained and patted dry with kitchen paper
    60 g amarettini biscuits
    None None icing sugar, for dusting
    None None whipped cream, to serve (optional)
Preparation
    Preheat oven to 325\u00b0F. Grease and line a 10 inch springform pan.
    Beat together butter, marzipan, sugar, vanilla extract, almond extract and pinch of salt until creamy. Add eggs, 1 at a time, beating well between each addition. Fold in flour and baking powder then milk. Fold in cherries and cookies. Transfer to prepared pan, level surface and bake for 45-50 mins, until a skewer inserted in the center comes out clean.
    Let cool in pan for 30 mins then transfer to a wire rack to cool completely. Dust with powdered sugar and serve with whipped cream, if desired.
