Wintry Beet Soup - cooking recipe
Ingredients

3 tbsp butter
1 1/3 lbs beets, peeled and diced
8 oz carrots, trimmed and chopped
8 oz potatoes, peeled and chopped
1 small onion, chopped
3/4 cup dry white wine
3 1/2 cups vegetable stock
6 tbsp creme fraiche
1-2 tbsp horseradish sauce
1 tbsp lemon juice
Preparation

Melt butter in a large saucepan on medium heat. Add beets, carrots, potatoes and onion and saute for 2-3 mins. Add wine and stock and bring to a boil. Reduce heat to low; cover and simmer for 15-20 mins, until the vegetables are soft.
Mix creme fraiche, horseradish sauce and lemon juice in a small bowl. Season then set aside.
Blend soup in a food processor, blender or using an immersion blender until smooth. Season. Divide soup among 4 bowls. Swirl in horseradish cream and serve.
