Banana And Raspberry Loaf - cooking recipe

7 tbsp olive oil margarine
3/4 cup firmly packed brown sugar
2 None large eggs
1 None large ripe banana, mashed
1/3 cup buttermilk
1 1/2 cups all-purpose flour
1/2 tsp baking soda
3/4 cup plus 5 tsp oat bran
8 oz frozen raspberries (about 1 cup)

Preheat oven to 350\u00b0F. Grease an 8 1/2-by-4 1/2-inch loaf pan with cooking spray and line base and two long sides with one piece of parchment.
Cream margarine and sugar in a bowl with electric mixer until fluffy. Add eggs, one at a time, beating between additions. Stir in banana and buttermilk. Sift together flour and baking soda. Fold into banana mixture with oat bran until just combined. Fold in frozen raspberries.
Spoon mixture into the pan and smooth surface. Bake for about 55 mins or until cooked when tested with a skewer. Let cool in pan for 5 mins before turning onto a wire rack to cool completely.
