Falafel Pitas - cooking recipe

Ingredients
    2 cans (15 oz each) chickpeas, rinsed
    1 small red onion, finely chopped
    1/2 cup chopped cilantro, plus sprigs for garnish
    1 tsp ground coriander
    2 tsp ground cumin
    1 None egg white
    1/3 cup flour
    4 None pita breads
    1 small cucumber, cut into ribbons
    1 None red pepper, chopped
    1/2 cup plain low fat Greek yogurt
Preparation
    Preheat the oven to 375\u00b0F. Process chickpeas, onion, cilantro, coriander, cumin and egg white in a food processor until mixture comes together. Transfer chickpea mixture to a bowl. Stir in flour. Season. Firmly shape mixture into 20 oval patties and place on a foil-lined baking sheet. Spray both sides with no stick cooking spray.
    Bake for 15 mins. Transfer to broiler and broil for 5 mins until crisp, turning once. Broil pitas for 1 min on each side or until heated through.
    Meanwhile, combine cucumber and red pepper in a bowl. Season. Fill pita with falafels and cucumber salad. Top with yogurt and garnish with cilantro sprigs.
