Thyme-Roasted Chicken And Vegetables - cooking recipe

Ingredients
    2 3/4 lb whole chicken
    4 tbsp olive oil
    1 tbsp sweet paprika
    4 tbsp fresh thyme leaves
    1 1/4 lb potatoes, peeled and sliced
    1 lb zucchini, sliced
    1 lb carrots, peeled and sliced
Preparation
    Preheat oven to 400\u00b0F. Season chicken then place in a roasting pan. Roast for 45-50 mins.
    Mix oil, paprika and thyme then brush over chicken. Add potatoes, zucchini and carrots to pan then place back in oven for 25-30 mins. Transfer vegetables to a serving platter and place chicken on top. Serve.
