Thai Roasted Chicken And Potatoes - cooking recipe
Ingredients

6 tbsp olive oil
10 oz shallots, peeled
2 1/4 lbs chicken thighs and drumsticks
1 1/2 lbs new potatoes, halved if large
2 None stalks lemongrass, thinly sliced
1 piece (1-inch) ginger, peeled and cut into thin matchsticks
1 None lime, sliced
Preparation

Preheat the oven to 350\u00b0F. Heat 2 tbsp of the oil in a medium skillet on medium-high heat. Cook shallots for 5-8 mins, until golden. Place in a roasting pan with chicken, potatoes, lemongrass and ginger. Add remaining 4 tbsp oil and lime; toss.
Roast for 40-45 mins, turning chicken and potatoes after 20 mins, until chicken is cooked through. Season.
