Meatballs With Beans And Rice - cooking recipe

Ingredients
    1 lb ground beef
    1 None egg, lightly beaten
    1/4 cup fresh breadcrumbs
    3 cloves garlic, minced
    3 slices bacon, finely chopped
    2 tbsp fresh parsley leaves, chopped
    2 tbsp oil
    1 None onion, chopped
    1 tbsp smoked paprika
    4 cups chicken stock
    2 None tomatoes, diced
    1 None red pepper, deseeded, roughly chopped
    10.5 oz long-grain rice
    1 (13.5 oz) can kidney beans, drained, rinsed
    3.5 oz green beans, trimmed
    1 None long green chili, deseeded, thinly sliced (optional)
Preparation
    Combine ground beef, egg, breadcrumbs, 1 clove garlic, bacon and parsley. Season. Roll into 20 meatballs.
    Heat oil in a large saucepan over medium heat. Working in batches, cook meatballs for 5 mins, until browned all over. Set aside.
    Add onion, remaining garlic and paprika. Cook for 1 min, until fragrant. Add 3 1/4 cups stock, tomatoes, pepper and rice. Bring to a boil. Cook, covered, for 10 mins, until rice is almost tender.
    Add remaining stock, meatballs, kidney beans and green beans. Cook for 5 mins. Spoon into serving bowls and sprinkle with chili, if using. Serve.
