Chicken Meatloaf - cooking recipe

Ingredients
    7 slices bacon
    1 lb ground chicken
    1 None small Spanish onion, finely chopped
    1 cup soft fresh breadcrumbs
    3 tbsp chopped fresh chives
    1 None large egg, lightly beaten
    2 tbsp barbecue sauce, combined with 1 tbsp boiling water
    None None mashed potatoes and steamed green beans, to serve
Preparation
    Preheat oven to 350\u00b0F. Grease a 3 1/2 x 7 inch loaf pan. Line with bacon, overlapping slightly. Transfer to a baking tray lined with parchment paper.
    Combine ground chicken, onion, breadcrumbs, chives and egg in a large bowl. Season then press into prepared pan. Fold bacon ends over to enclose filling. Cover with foil and bake for 20 mins. Turn meatloaf upside down on baking tray and remove pan. Brush with barbecue sauce and bake for another 15-20 mins, or until cooked to your liking.
    Slice meatloaf and serve with mashed potatoes and green beans.
