Ingredients

1/2 cup sugar
4 None passionfruit, pulp scooped out, strained for juice
3 tbsp powdered gelatin
3/4 cup water
None None sugar, to coat jellies
Preparation

Sprinkle a little water in an 3 x 10 inch baking pan and set aside. Put sugar and passionfruit juice in a saucepan. Heat, stirring, until sugar dissolves. Reduce heat and simmer uncovered, without stirring, for 10 mins, until syrup thickens slightly and clears.
Meanwhile, in a small bowl, sprinkle gelatin over 1/4 cup of water. Set aside for 5 mins, until gelatin softens and expands. Place bowl in container of hot water. Stir until gelatin melts. Whisk into passionfruit syrup. Set aside for 15 mins. Skim solids from surface.
Pour into prepared pan. Cool to room temperature; cover. Chill for 2 hours, until firm.
Cut jelly into 2 inch squares. Toss in sugar. Serve immediately.
