Lemon Barley And Ginger Cordial - cooking recipe

Ingredients
    1/2 cup pearl barley
    2 None lemons, peel finely grated
    3 slices fresh ginger
    1 cup lemon juice
    1 cup granulated sugar
    None None Cinnamon sticks, if serving hot (optional)
Preparation
    Rinse the barley well under running water. Place in a saucepan with lemon peel, ginger slices and 6 cups water. Bring to a boil on high heat. Reduce heat to low; simmer for 10 mins. Strain into a large bowl, discarding barley and ginger.
    Return the liquid to saucepan and add the lemon juice and sugar. Heat until the sugar has completely dissolved. Pour cordial into a clean bottle and store in the refrigerator.
    To serve, use a ratio of 1 part cordial to 2 parts hot or cold water. Add a cinnamon stick if serving hot.
