Chicken And Soba Noodle Salad - cooking recipe

Ingredients
    None None FOR THE DRESSING
    2 tbsp rice wine vinegar
    1 tbsp fresh mandarin orange juice
    2 tsp soy sauce
    1 tsp grated fresh ginger
    1/2 tsp sesame oil
    None None FOR THE SALAD
    4 oz soba noodles
    2 cups shredded cooked skinless chicken breast
    6 None iceberg lettuce leaves, torn
    1 small cucumber, thinly sliced
    1/2 None red onion, thinly sliced
    1 None mandarin orange, segmented
    1 None avocado, coarsely chopped
    2 tsp sesame seeds, toasted
Preparation
    For the dressing, whisk all ingredients in a small bowl.
    Cook the noodles in a large saucepan of boiling water until tender; drain. Rinse under cold water, then drain again.
    Place noodles in a large bowl with chicken, lettuce, cucumber, onion, mandarin orange and avocado; sprinkle with sesame seeds. Drizzle with dressing.
