Tuna Cannelloni - cooking recipe

Ingredients
    2 1/4 lbs sweet potatoes, peeled and chopped
    3 cans (5 oz each) tuna in water, drained and flaked
    1 jar (10 oz) roasted pepper, drained and chopped
    1 None celery stalk, finely chopped
    2 cloves garlic, crushed
    3 cups tomato puree
    1/2 cup fresh basil leaves, plus additional, to garnish
    1 pkg (8 oz) cannelloni pasta tubes
    1/2 cup grated Parmesan cheese
    None None Olive oil, to drizzle
Preparation
    Preheat the oven to 400\u00b0F. Cook sweet potato in a saucepan of boiling salted water 10-15 mins, until tender. Drain then mash.
    Combine mashed sweet potato, tuna, pepper, celery and garlic in a large bowl. Season.
    Bring tomato puree and 1 cup water to a boil in a medium saucepan on medium heat. Season. Stir in basil. Reduce heat to low; simmer, uncovered, 10 mins. Spread 1/2 cup sauce in bottom of a 13 x 9-inch baking dish.
    Spoon filling into piping bag and pipe into tubes. Arrange in single layer in baking dish. Pour remaining tomato sauce over the top. Sprinkle with Parmesan cheese and drizzle with olive oil. Cover with foil.
    Bake 20 mins. Remove foil. Bake 10-15 mins. Garnish with additional basil leaves.
