Raisin Cake - cooking recipe

3 cups raisins or other dried fruits
1/2 cup sweet sherry
8 tbsp (1 stick) butter, chopped
1 1/4 cups sugar
2 None eggs, lightly beaten
1 tsp vanilla extract
1 1/2 cups flour
1 tsp baking powder
Preparation

Preheat the oven to 300\u00b0F. Lightly grease an 8-inch round cake pan and line with parchment paper.
Place raisins, sherry and 1/2 cup water in a large saucepan. Set aside to soak for 30 mins.
Bring raisin mixture to a boil on medium-high heat. Reduce heat to low; simmer for 8-10 mins, or until raisins are plump and most of the liquid is absorbed. Add butter and sugar. Simmer, stirring, until butter has melted and sugar has dissolved. Remove from heat and place bottom of the saucepan in cold water to cool mixture.
Stir in eggs and vanilla. Add sifted flour and baking powder and mix to combine. Pour into prepared pan.
Bake for 1 hour 40 mins, or until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; completely on wire rack.
