Ingredients

1 tbsp olive oil
1 None leek, finely sliced
9 oz frozen spinach, thawed
7 oz cooked, shredded chicken
7 oz crumbled feta cheese
2 None large eggs, lightly beaten
1 tsp lemon zest
12 sheets filo dough
None None mixed greens and lemon wedges, to serve
Preparation

Preheat oven to 350\u00b0F. Lightly grease a baking tray.
Heat oil in a large frying pan over medium heat. Saute leek for 4-5 mins, until tender. Remove from heat and stir in spinach. Transfer to a bowl along with chicken, feta, eggs and lemon zest. Season to taste.
Working with 2 sheets of filo dough at a time, layer sheets on a clean work surface, spraying each layer with oil. Fold in 1/2. Spoon 1/6 of chicken mixture into the center, fold in sides and roll up to form a parcel. Place, seam-side down, on prepared tray. Spray with oil. Repeat with remaining pastry and filling. Bake for 25-30 mins, until pastry is crisp.
Serve with salad and lemon wedges.
