Chocolate Cookie And Apple Parfait - cooking recipe

Ingredients
    1 lb apples, peeled cored and cut into cubes
    1/4 cup sugar
    2 tbsp lemon juice
    1/2 cup whipping cream
    1/4 lb mascarpone cheese
    3/4 cup full-fat yogurt
    1/2 tsp vanilla extract
    1/4 lb chocolate cookies with cream filling, coarsely chopped
Preparation
    Put the apples in a saucepan with 1 tbsp of the sugar, the lemon juice and 2 tbsp of water. Cover the pan and simmer for 2-3 mins. Transfer the apples to a bowl and allow to cool. Using a hand mixer, whip the cream in a bowl until it is stiff. In a separate bowl, mix the mascarpone and the yogurt with the remaining sugar and the vanilla extract. Fold in the whipped cream.
    To assemble, put a spoonful of cookies in the bottom of a glass dessert dish. Layer with a spoonful of apple compote, then a spoonful of the cream mixture. Repeat until all the ingredients are used up. Refrigerate until ready to serve.
