Crispy Fried Chicken - cooking recipe
Ingredients

3 1/2 lb chicken, cut into pieces, drumsticks scored, breasts halved
6 1/2 tbsp all-purpose seasoning
1 1/4 cups buttermilk
2 1/4 cups self-rising flour, seasoned
None None vegetable oil, to deep-fry
1/4 cup sour cream
1 None lemon, zested, cut into wedges
3/4 cup heavy cream, whipped
None None mixed greens, to serve
Preparation

Combine chicken with 2 tbsp seasoning and buttermilk. Toss to coat. Cover with plastic wrap and chill for 6 hours to marinate. Drain chicken and discard marinade.
Combine seasoned flour and remaining seasoning in an extra-large resealable food storage bag. Add drained chicken pieces. Holding closed bag tightly, shake vigorously until chicken pieces are coated evenly.
Heat oil in a large heavy-bottomed saucepan over medium heat. Working in batches, deep-fry chicken for 10 mins, or until golden brown and cooked through. Drain on paper towels.
To serve, whisk together sour cream and lemon zest. Fold in whipped cream. Serve with chicken, mixed greens and lemon wedges.
