Ham And Sweet Potato Frittata - cooking recipe

Ingredients
    7 oz sweet potatoes, peeled, thinly sliced
    2 tbsp olive oil
    1 None red onion, thinly sliced
    2 cloves garlic, crushed
    6 None medium eggs
    3/4 cup heavy cream
    5.25 oz ham, chopped
    2.75 oz frozen peas
    2.75 oz jarred roasted red pepper, sliced
    1 tbsp chives, chopped
    None None Arugula salad, to serve
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease a 6 x 10 inch loaf pan. Line base and sides with parchment paper.
    Place sweet potatoes on a baking sheet; drizzle with half the oil. Bake 10-15 mins, turning once, until tender.
    Meanwhile, heat remaining oil in a large frying pan on high. Saute onion and garlic 3-4 mins, until tender; allow to cool.
    In a large bowl, whisk together eggs and cream, until combined. Stir in ham, peas, pepper, chives and cooked onion and garlic. Season to taste.
    Pour mixture into pan, layering with sweet potato. Bake 30-35 mins. Cool slightly; cut into slices. Serve with arugula salad.
