Waffles With Cherry Compote - cooking recipe

Ingredients
    2 14.5 oz cans cherries in water, reserving the juice
    2 tbsp cornstarch
    2 tsp vanilla extract
    1/2 cup sugar
    3/4 cup butter, softened
    4 medium eggs
    2 cups all-purpose flour
    1/2 cup milk
    3/4 cup sour cream or creme fraiche
    10 scoops vanilla ice cream, for serving
Preparation
    Mix some of the cherry juice with the cornstarch to make a paste. Heat the rest of the juice in a pan with 1 tsp vanilla and 2 tbsp of the sugar. When it comes to a boil, whisk in the cornstarch paste and simmer for a minute or two until thickened to a sauce.\r\nStir in the cherries and leave the compote to cool.
    To make the waffle batter, mix the butter and remaining sugar with the rest of the vanilla and a pinch of salt until creamy. Stir in the eggs one at a time, then add the flour alternately with the milk and cream to make a smooth thick batter.
    Preheat a waffle iron and brush the surface with oil.\r\nSpoon batter into the shapes and bake, in two batches, for about 10 mins. per batch. Serve waffles with cherry compote and ice cream.
