Saganaki Shrimp - cooking recipe
Ingredients

1/4 cup olive oil
1 None red onion, sliced
4 large tomatoes, chopped
2 tbsp oregano leaves, plus additional, to serve
1 tsp sugar
1/2 cup white wine
1 lb large shrimp, peeled and deveined, with tails on
1/4 cup ouzo
1 1/2 cups crumbled feta cheese
None None Lemon wedges and bread, to serve
Preparation

Heat 2 tbsp of the oil in a large flame-proof casserole on medium heat. Saute onion, 3-4 mins, until tender.
Add tomato, oregano and sugar. Cook, 3-4 mins, stirring, until tomato begins to soften. Stir in wine and bring to a simmer. Cook, 2-3 mins, until reduced by half. Remove from heat.
Preheat the broiler on high.
Meanwhile, heat remaining 2 tbsp oil in a large skillet on medium heat. Cook shrimp 30 seconds each side, until they just begin to change color. Add ouzo to pan, stirring. Remove from heat. Transfer shrimp and pan juices to tomato mixture, mixing well. Season to taste. Sprinkle with feta.
Broil 4-5 mins, until feta turns golden. Sprinkle with additional oregano leaves. Serve with crusty bread and lemon wedges.
