Calzone Pizza Roll With Spinach And Sun-Dried Tomatoes - cooking recipe

Ingredients
    1 None onion, finely chopped
    1 clove garlic, finely chopped
    2 tbsp olive oil
    750 g spinach leaves, washed and shaken dry
    None None freshly grated nutmeg
    1/2 cup basil, leaves removed
    125 g mozzarella cheese, pulled into smallish pieces
    440 g packet fresh pizza dough
    314 ml jar sun dried tomatoes in oil
    30 g pine nuts
    None None baking paper
Preparation
    Roll out pizza dough into a 10 x 14 inch rectangle. Brush a piece of parchment paper with oil and place dough on top. Roll up and chill.
    Meanwhile, heat remaining olive oil in a large pan and sweat onion and garlic for 4 mins. Add spinach, cover and steam for 2-3 mins. Season with salt and nutmeg to taste then remove from pan and transfer to a colander to drain.
    Preheat oven to 400\u00b0F. Unroll pizza dough, spread spinach, tomatoes and 1/2 the cheese over top. Sprinkle with pine nuts and basil. Roll up then place seam side down on a clean piece of parchment paper. Distribute remaining cheese over top then bake for 20 mins. Remove from oven and allow to cool for 15 mins before serving. Garnish with basil.
