Lentil And Rice Pilaf - cooking recipe

Ingredients
    3 1/2 tbsp butter
    1 None onion, finely chopped
    7 oz long-grain or basmati rice
    7 oz dried green lentils, soaked in cold water for 30 mins then drained
    2 cups chicken stock
    3/4 cup fresh cilantro, finely chopped
Preparation
    Melt butter in a large frying pan over medium heat. Cook onion, stirring, for 2-3 mins, or until onion has softened. Add rice and drained lentils. Cook, stirring, for 2 mins. Stir in stock and 2 cups water. Bring to a boil then reduce heat to low and simmer, uncovered, stirring occasionally, for 30 mins, or until liquid is absorbed and lentils are just tender. Remove from heat and stir in cilantro.
    Let stand, covered, for 10 mins before serving.
