Curried Cauliflower With Cashews - cooking recipe

Ingredients
    1 lb cauliflower, cut into florets
    2 tbsp peanut oil
    1 1/4 cups unsalted cashews
    1/2 tsp turmeric
    1 stalk lemongrass, white stem finely chopped
    2 cloves garlic, minced
    1 None red chile, finely chopped
    3/4 cup sugar snap peas, trimmed
    2/3 cup basil
Preparation
    Bring a large saucepan of salted water to a boil over high heat. Blanch cauliflower 2-3 mins, until almost tender. Drain well and set aside.
    Heat oil in a wok or large skillet on high. Stir-fry nuts and turmeric 2-3 mins until nuts are lightly toasted.
    Add cauliflower, lemongrass, garlic, and chile and stir-fry 1-2 mins, until fragrant.
    Mix in peas. Stir-fry a further 1-2 mins. Add basil, tossing well. Serve with rice, if desired.
